A good many raw foodists aren't 100% raw. Some eat small quantities of cooked foods, so if these rice and potatoes aren't triggers for you it would be OK to include them in smaller quantities. Both are loaded with vitamins so neither are horrible food choices for the average person as long as you don't load either with high calorie toppings neither are bad food choices.

http://www.choosingraw.com/I second the zucchini pasta. If you get a spiralizer it's super easy to make. Paper thin slices of beet or butternut squash with a dollop of nut "cheese" and veggies make for excellent rawvioli. Raw lasagna can also be really delicious. In restaurants I enjoy some of these items gently warmed in a dehydrator, but you don't need one to make much of this at home. For a rice replacement, many use cauliflower or parsnip. When I'm making vegan sushi I actually prefer the parsnip rice, which tends to be just parsnips pulsed in the food processor with a liquid paste of almond butter and sushi vinegar (or other vinegar + a touch of raw sweetener) stirred in after the pulsing is complete.
