Personally I'm not a fan of water-fasting.
Basic knowledge of biology, chemistry, nutrition, and of how the body functions tells me it's not a good thing to do for more than a few days.
What kind of questions do you have about going raw?

I've been vegetarian 20 years, since I was 12 - not easy as EVERYONE else in my family were big meat eaters. Growing up in MIami and then New York, let me tell you - not easy to convince people that I knew what I was doing. I rarely ate meat as a kid though (and always cried and screamed about dead animals when anyone tried to make me! even as young as 6!!), so when I learned what vegetarian was and said, "Well that's what I am!" - my Mom wasn't too shocked.
My best advice is go Vegan, then pick a number you think you feel comfortable with as far as the raw part goes. For me that number is 80%. Each day I try and do at least 80% raw. This gives me some flexibility and I still get to enjoy some foods I like (mochi puffed rice squares for example, or french fries with my brother once in a great while).
I even give myself a little leniency on the vegan thing a few times a year, so when I'm in NYC I can have a gross Black & White cookie or slice of Ray's and not be mad at myself. Of course, my stomach gets PLENTY mad for me!!! (I usually feel crappy enough after that I behave for a good few months!)
The key to long term dietary success is learning moderation. Truly.
Anything to extreme or strict and eventually you will falter and feel like you've failed at something. Going vegan and raw is a great way to live, you lose weight without even thinking about it and have energy abound!
Juice fasting is a nice way to transition away from old bad eating habits and into the new.
