I was wondering if it is healthy to eat fermented foods, like kimchi...kimchi is one thing that I can not give up!
I heard many times that kimchi is very VERY healthy for you.
here is a very good recipe, VERY easy:
I used to help my mom make kimchi, which is not exactly "raw", because she used boiled flours to make the "glue" and shrimp sauce and sugar.
So thats really the ONLY thing that is missing...and you don't really NEED the glue, the sugar, the shrimp fishy taste...just add sea salt lol.
instead of the salt I think it is better to use sea salt like this recipe:
the first link, the pictures are so yummy and more detailed in a simple way. (but 5 chinese cabbage is very big amount, so the second link is more simpler quantity)
Follow the amount on the second link, but follow the recipe for the first link. Don't shred the scallions, it is better if you just chopped it into approximately 1 inch bar.
And also add in finely chopped onion as well...I did not see any onion ingredient in there.
I'm going to make this so I can eat it for my post cleanse. Its going to take a few days anyways to make it taste good.
I'm so happy that I don't have to take out kimchi out of my diet!
Next I just need to research what can make "rice" without using rice...
